This is a great recipe for using overripe bananas. It's hard to believe these snack bars have zero added sugars, but they get all their sweetness from fruit. It's easier to cut the bars while they are still hot.
1 tsp vegetable oil
2 bananas
1 tsp vanilla extract
3 tbsp vegetable oil
7 pitted dates, chopped
2¼ cup rolled oats
¼ cup sunflower seeds (toasted)
2 tbsp chia seeds
2 tsp cinnamon ground
Preheat oven to 160°C fan. Lightly oil an 8 x 8 inch baking tray, and line with baking parchment.
In a large bowl, mash bananas with a fork.
Stir in vanilla extract and oil.
Chop the dates, and toast the sunflower seeds (in a dry pan until golden).
Add dates, rolled oats, sunflower seeds, chia seeds, and cinnamon to bowl and stir to mix.
Press the mixture into the baking tray. Bake for 15-20 minutes or until edges are crispy but not burnt.
Remove from oven. Cut into 16 equal squares while still warm in pan. Leave bars in pan to cool.
